    Very good and very versatile, this makes a good vegetarian meal. The only downside is it takes so long to roast. Also, I recommend adding the basil after it has finished baking, not before, to keep it fresher. It made for excellent leftovers when pan-fried in a little olive oil to heat it up. I served it with leftover pepper-preserved lemon sauce from the "slightly exotic skillet broccoli and cauliflower" recipe from Food52. Amazing! Harissa also makes a wonderful accompaniment.
