    Nice variation. Perfect with a soup and salad supper. A touch of sweetness from the carrot. 1 tsp of coarsely ground pepper was assertive, but still enjoyable; ¾ tsp might be better. Although I was uncharacteristically faithful to the recipe, the batter was very sloppy. Needed another quarter cup of flour to form a ball and an extra 10 minutes to cook, and even then the texture was rather moist. Try starting with less water.
