    This is a really delicious warm salad, the combination of ingredients and the dressing just really work well together and feel hearty yet virtuous and a little unusual too. I've made this a few times, sometimes as a side dish and most recently as a baked potato topping. Even my partner, an "it's nice but where's the meat" kind of guy really loved it and didn't notice or complain about it being completely vegan!

    Pg 136 I love this salad as the roasted carrots add a lovely sweetness and heartiness to it and the herbs and spices make it tasty too. At 136 calories a portion you can add extra veg on the side or even have a double portion!
