    I really liked the marinade and the salsa verde, which brought this dish to life. But lean pork meat griddled like this does have a tendency to dry out and get tough, and sadly that's what happened here. Thanks to the marinade and the added salsa, it balanced out OK, but I'm not sure I'd make this again - or else I'd use a fattier cut of pork.
