    Can substitute beef round for beef chuck. Soak pinto beans overnight.

    This was easy and delicious. I had proportionally more chuck and less bacon than called for, three chipotles instead of four, served over canned pintos, garnished with crema and cilantro, but not serrano. It was not overly hot for us. Just perfect.
