Tuna confit with beans from Waitrose Food Illustrated Magazine, March 2001 (page 25) by Alice Waters

Where’s the full recipe - why can I only see the ingredients?

Accompaniments: Aioli

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Absolutely divine. Husband's comment was "This was the dinner I have been wanting all day but I didn't know it" - beautifully tender, well-flavoured tuna with a lovely warm bean salad. I used less oil for the confit, only using just enough to cover the tuna steaks, and just used a couple of tablespoons of oil in the salad because I made aioli to go with it. I also added a couple of diced tomatoes to the salad. I've been asked to make it again next week.
