    This was a great eggs for dinner option. She gives lots of suggestions re: what you can use/sub (which I always appreciate) so I used broccoli (sauteed followed by a quick steam 1st) in place of the kale, added a handful of chopped ham and this time used the pecorino romano & monterey jack. Her cook time was also on target and I would come back to this one again.
