    With my smallest biscuit cutter (1.5" from a nested set of 4) & potatoes with a suitable circumference to create the circles of potato skin, this is a fun riff on twice baked potatoes. I used a ricer & a fork for the filling (rather than a mixer) and added chopped scallions to the filling. Because I made/chilled them early, I baked them for around 8-10 minutes to heat the filling before topping with the remaining cheese & running under the broiler. They were a great addition to dinner and they reheated really well on day 2.
