Can substitute turkey legs and turkey thighs or chicken for turkey breast, marjoram for fresh oregano, oranges for sour orange juice, guëro chiles or New Mexico green chiles for xcatic chiles, chicken stock for turkey stock, and the book's "Red seasoning paste (Recado colorado)" for achiote paste.
