Fish in aromatic sauce (Pescado en escabeche) from Mayan Cuisine: Recipes from the Yucatan Region (page 164) by Daniel Hoyer and Marty Snortum

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Can substitute peppers for chiles of your choice.

Aptly titled, aromatic with a tangy-sweetness. A good fish dinner with many different vegetables. A surprising change from the stereotypical Mexican meal! I used rockfish fillets, and the optional carrot & tomatoes.
