    This was very tasty with a pleasant zinginess from the lime, and lots of lovely pickled veg. It's not unachievable for a weeknight but it does involve a few stages (though you can prep the meatballs, pickling liquid and glaze in advance). I omitted the lemongrass but didn't miss it and used egg noodles instead of rice vermicelli. I was a bit dubious about the final stage involving the glaze as I didn't see how it would become sticky, and it did remain quite runny. If making again I'll remove the foil and turn the oven up to make sure it thickens up. This would have been a repeat recipe for me but it reminds me of one of my staple dishes which uses many of the same ingredients and is a lot less hassle, so I'm not sure I'd choose to make this recipe over that one. Still made a delicious dinner though.
