Basic tomato sauce, two ways from The Elements of Pizza: Unlocking the Secrets to World-Class Pies at Home (page 145) by Ken Forkish

  • canned tomatoes

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Easy, great tasting sauce. I essentially used the ‘food mill’ instructions, but with a potato ricer rather than a food mill, and it produced great results. However, I got very different results from two different cans of Cento tomatoes. One can was essentially tomatoes in tomato juice, the other was more like tomatoes in tomato sauce. The watery can I cooked down. That discrepancy is obviously not on the recipe writer, but the manufacturer.

Pizza sauce doesn't get any easier than this, and with good quality canned tomatoes (I like Cento) it tastes great, too.
