    Can substitute Thai chiles for jalapeño chiles. Chicken must marinate for at least 2 hours and up to 12 hours.

    The chicken and it's marinade were a winner, and I would make this again. The cucumber salad was lacking... maybe fish sauce...and then uber in onion taste so I would reduce the shallot. Regardless, I think that there are better versions of this. I didn't make the peanut sauce because I had another recipe that I previously made in the freezer but I am dying to try it.

    Even though I had a hard time grilling my chicken indoors, this still turned out really good. We didn't even feel like the chicken needed the peanut butter sauce, but the sauce was great too!
