    I made this with the last of a jar of homemade daikon kimchi (from Cook Real Hawai’i, an outstanding recipe). It really is a party of flavor and textures, can’t wait to try it with cabbage kimchi

    Made for a light dinner. Easy and tasty! Dressing is so good! Used just two pieces of bread since it was just two of us.

    I didn't know what to expect since I don't always like kimchi, but I genuinely loved this. The fat from the avocado perfectly tempers the acid from the kimchi, and the crunch of the kimchi pairs beautifully with the creamy, mushy avocado. The kimchi mayo was an indulgent touch, and the sesame seeds really tied it all together. I have a new favorite breakfast! This did not convert my avocado-toast-hating husband however, but that just means more for me!

    All the other reviewers found this so flavorful and I just didn’t, so either the kimchi was kind of meh or I’m getting Covid. (Fully vaxxed and very careful, so I’m thinking it was probably the kimchi.)

    Really yummy. I had to use normal sandwich bread, which wasn’t as good as crusty country bread would be, but it was still great. Will seek out the right bread and make this again later in the week.

    This was a game changer recipe for me. I had never heard of the combination of Mayo and kimchi. Love it and make this all the time.

    I mixed avocado, dressing, and kimchi together and next time I'll stick to layering as Julia suggested. Mixing everything together was ok, but bright flavors were lost a little

    Love Kimchi and this recipe made for a quick and tasty breakfast. I did one of the spin offs and topped it with an over easy egg. Will be making this one again.

    I never thought I'd bother with avocado toast; but I love kimchi and had some along with the avo on hand, so I gave this a shot. It's ridiculously easy & quick. It's quite good, especially when you just get home, hungry & tired, and need something *now*. And the mayo + kimchi juice dressing is very handy for other uses, ie. steamed broccoli or leftover chicken or steak.
