Dry-fried bitter melon (Gānbiān kuguā) from All Under Heaven: Recipes from the 35 Cuisines of China (page 290) by Carolyn Phillips

  • peanut oil
  • bitter melons

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Easy recipe. Good complement to a sweeter Chinese main dish. The bitter melon is a similar texture to zucchini, with a mild bitter flavor.
