    12/2025 - Still making this. Now I use whatever orange is around (this time clementines), juice into a measuring cup, throw the spent orange in the IP, and top up the liquid with water to 1/2 c. If the juice was shy, I fix w a splash of vinegar and a squeeze of sweetener till I feel it's right. However many beets are made, double if you plan to have any around for those fridge snacks (or triple? we didn't have any leftover last night) 4/2/2024 - This is so, SO good and changed my mind about beets. We inhale this from the fridge, without making the salad, like savages.

    A nice change of pace from my usual way of preparing beets. My beets were a wee bit undercooked. Still good, but I'll let them go a little longer next time.
