    This recipe was Refreshing at the end of a hot summer day. I added four cooked jumbo shrimp (coarsely chopped) and drizzled olive oil over the tops of the lettuce taco mixtures before serving. An easy, light meal to put together. A pinot noir rosé paired nicely. A gazpacho or other summer soup and a baguette or tortilla chips would go well with the tacos for heartier appetites.
