    Surprised this turned out rather well. Very refreshing and would be great served chilled at a summer meal. Oddly, mint that is in the recipe name is not even listed in the ingredients list nor instructions in my book. I added a generous amount of torn mint at the end anyway. Also used at least 1.5x the amount of sliced radish and scallions, and used orzo instead of pastina.
