Rice pudding from Seductions of Rice (page 379) by Jeffrey Alford and Naomi Duguid

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

A friend of mine has been ill and said she's been enjoying rice pudding cold from the fridge. I went looking in 'Seductions', knowing they'd have a recipe. really great. II's pretty soupy if you follow their measurements, but leaves you with a good texture when it comes out of the fridge (still needs to be diluted a bit). I ate it cold and was very pleased. I used Thai jasmine rice.
