Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    I used the GF flour mix recipe. The dough was like thick, pancake batter. I let it rise 1.5 hours until I could see significant bubbles. I proofed in my oven. I “overgreased” the bowls because of previous bakes with the regular peasant bread recipe sticking to bowls. Had to bake much longer to made sure the Dough hit 210° still had to keep baking because of doughy center. That being said this is a great gluten-free bread. Wonderful texture! Would not know it was gluten-free if I had not made it myself. Not grainy, but soft and nice chew. Super easy with great results. Could use some salt. Can’t wait for my GF husband to try!
