    It is possible to prepare this without a mandoline if one is willing to stand for 45 minutes slicing the sweet potatoes to appropriate thinness with a vegetable peeler and a paring knife. Is it worth the time? Maybe not. The gratin is good tasting and nutritious, but not so memorable I would make it again. Difficult to serve without the layers starting to separate.
