      We liked this quite a bit, although I missed the depth of flavor that using a stock (rather than water) would have provided. I think you could easily up the spices too for some more punch. I used a combination of butternut and kabocha squashes since that is what I had on hand. I made it ahead for eating today, and the quinoa had definitely thickened the chili overnight.

      This is a great frosting that you make in the food processor. I used bittersweet chocolate and it was not too sweet.

      My days of disappointment with chocolate frosting are over! The milk chocolate version of this recipe was perfect with yellow cake—great chocolate flavor, smooth and creamy texture, not excessively sweet, and doesn’t crust over. And talk about easy—frosting from the food processor! Who would have thought?

      This was just OK. Didn't love the flavors together, especially the balsamic. Maybe would use a different vinegar next time. Left out the pine nuts and added chickpeas for protein to make a vegetarian main to take for work lunches.

      Yummy kebabs. I did not save marinade for drizzling after roasting - next time definitely remember this step.

      We did not use red pepper, and our cauliflower was purple. Because we live at elevation (7200 ft), the cooking time was longer as well -- we cooked it (during the last part, in the oven) for about 50 minutes. We could've done an hour. We also used 2 Tbs. of cilantro AND 2 of fresh mint, an extra clove of garlic and a little extra curry powder. We still have leftovers and my husband is already asking if I will make this again!
