    Not as compelling as I imagined. By the time I mixed in the gelatin, it had already become almost solid. So instead of acting as a thickener, it kind of just left gel flecks throughout the cheesecake. I guess in cold weather, you've got to work a bit quicker, but it's an easy recipe overall. Texture was softer than I really wanted and crust somewhat crumbly. Substituted 1tsp mint extract and 2 tbsp cream for crème de menthe.
