    The raisins closest to the surface burned, so next time I’ll bake at 350 instead of 375 to mitigate that.

    I didn't do a great job with this cake and need to try it again! It was dry and I made my icing way too thick. I used an 8-cup dark Wilton bundt -- probably should have reduced the temp and time due to the dark pan. Also, I used the volume measurement of raisins (1 cup), but if I had followed the weight, 200g, I would have had more raisins and perhaps a moister cake. My icing was too thick, maybe because I used 1 less tbsp of butter. Should have added more milk to get a more pourable consistency.

    Wife and I loved it. Kids didn’t like the raisins because of the rum.

    We are fans of rum raisin ice cream and loved this cake. Half the recipe just barely fit in a 6.5" fluted pan. Baking time for the smaller cake was about 35 minutes. The weight of the raisins is more than the volume measurement; I used the volume as it seemed right.

    This cake was the perfect level of sweetness and the rum came through but was not too strong. Excellent holiday dessert!
