Mexican hot dogs (Perros calientes) from Dos Caminos Mexican Street Food: 120 Authentic Recipes to Make at Home (page 166) by Ivy Stark and Joanna Pruess

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This recipe was a bit of a miss - first, few people were interested in adding a pickled jalapeno to their hot dog as hot dog condiments should be able to be spread evenly through all bites. Perhaps, diced rather than sliced would be a bit better. Second, the sharp cheddar seemed a bit out of place despite my using it in several Tex-Mex recipes. I did like the recommended salsa with the hot dog and bacon.
