    I skipped the whole sole, fry the bones portion of this recipe. Personally, I know a fishmonger who is quite willing to sell me sole fillets ready to fry in butter. This is one of the zillions season, dredge in flour, fry in butter fish recipes. The flavor is in the chili-shiso-onion-lime sauce ... which is absolutely magically. This is a recipe that will definitely be repeated.
