Roman broccoli (Broccolo Romanesco) [Angelo Preziosi] from I Heart Rome / The Eternal City: Recipes & Stories from the Eternal City (page 122) by Maria Pasquale

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This is a nice way to enjoy romanesco. My kids, who like cauliflower more than broccoli, enjoyed this (after I explained it was "fractal cauliflower") because I went easy on the chilis but if I were cooking just for adults I would kick up the heat a bit more.

Stop boiling before "just tender" (in recipe), less than 10 mins, more like 5-8 depending on size, so pan heat doesn't overcook to mushy.
