Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    I used 3 endives, no mint (didn't have), and half the almonds/lemon juice/oil/fish sauce, and was happy with those proportions. I cut the apple in thin slices rather than rounds as that shape made more sense to me. I couldn't identify the fish sauce and can only presume it added something. This was a tasty, refreshing salad and 2 of us finished it all.

    This is a sparkling, refreshing salad. My only complaint is that it's a bit awkward to get a bite of all of the ingredients together because of the assorted shapes involved: whole almonds, long leaves of Endive and apple slices. That said, the flavor combination is quite lovely.
