Baked eggs with crushed chickpeas, chorizo, and bread crumbs from Dining In: Highly Cookable Recipes (page 110) by Alison Roman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Can substitute cilantro for parsley.

I used kielbasa instead of chorizo, so I added 1 tsp smoked paprika. Also used canned tomatoes instead of fresh. Added a little frozen spinach. Used dried herbs in the bread crumbs. Really tasty!

Delicious! Just like shakshuka, but better. Very hearty. I didn’t make the separate breadcrumb recipe. Instead, I toasted Panko and olive oil added only salt, pepper and red pepper flakes tasted great. No need to make a separate recipe. ?

Really tasty. I only had 3 oz of chorizo, but it was still the dominant flavor of the dish. Using the full 6 oz would be excessive/a waste of an expensive product.

4.5* don’t skip the bread crumbs! They were very yummy on top.

We had this for a lazy supper. Relatively easy to put together and super tasty. I ran out of time to make the breadcrumbs and would do them next time.

I make a very simplified version of this with soyrizo, canned tomatoes, and toast (instead of the breadcrumbs). Wonderful, easy, and homey dinner with tons of flavor.

This is really great and easy to make. We've had it for both breakfast/brunch and dinner. It's a winner.
