    These lettuce lined tortillas filled with delicious chicken made a great hot day dinner. With no "hot chili oil" on hand, I used SoSecret garlic-chili oil (full of bits of ginger, shallots, onions, chiles & garlic) + sambal for extra heat in the marinade/dressing. This time I skipped her peanut sauce as I had Thai sweet chile sauce to use up. We also added roasted red & yellow sweet pepper strips and a big mix of pickled things (onions, carrots, hot peppers & radishes). Such an easy idea that we really enjoyed.
