    I’ve been wanting to try this technique for a while, and tonight was the night. It was fun, and the result was spectacular! The fish turned out great, cooked perfectly and really flavorful. It just melted in our mouths. The salsa verde was really a perfect accompaniment. I served it with the Kohlrabi, apple, and celery root salad with black pepper yogurt from the same cookbook, also fantastic. Looking forward to making both of these again.
