Lemon fusilli with arugula from Barefoot Contessa at Home: Everyday Recipes You'll Make Over and Over Again (page 120) by Ina Garten

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I've owned this book for over 20 years and finally tried this recipe. Dairy free heavy cream is now widely available so I used that, and found the dish much lighter and less rich then expected. I used cherry tomatoes from my garden which were tiny compared to grocery store tomatoes so I just left them whole. My daughter is still talking about how delicious this was and asked that it go into the regular rotation.

If you are cooking by weighing the ingredients then this recipe calls for way too much arugula. If you watch the Youtube video of this recipe she takes just a large handful which is much less than a half a pound of arugula. More like a sixth. I would make this again but I would just add arugula to taste, and I would finally dice the tomatoes and just add them on top as a garnish. I thought they were a little too cold and the texture of the larger pieces of halved cherry tomatoes didn't really work for me in this pasta, but the color was nice.

Other versions of this recipe include broccoli crowns, so we always blanch some cut into small florets and add them to the pasta along with the tomatoes etc. We cut the recipe in half and serve it as a side dish.

Why have I waited so long to make this? It is easy to throw together and absolutely dreamy! This will certainly go into my regular rotation- even if it does use two cups of cream (so worth it!)

Wonderful! The lemon cream was fabulous. Instead of adding lemon slices at the end, I just squeezed in some extra juice.

Used 1 1/2 cups almond milk + 1/2 plain greek yogurt instead of heavy cream
