    Absolutely love this recipe! It's a summer staple in my house. I make exactly as written, though I prefer to finely grate my garlic on a micro planer (this makes the dish VERY garlicy, so you could use less for a less intense flavor, but we like it that way) Super simple, quick, and really showcases those late summer flavors of tomato and basil.

    I made this with grocery store grape tomatoes (marinating = 4.5 hours) & it was still really good. To make a slightly more substantial bowl (& to sorta mimic an Italian chopped salad vibe) I added pickled sweet yellow & orange peppers + some brine and pan fried cubes of both a mild & hot salami. The tomato mixture got a swirl through the hot pan with the salami before being tossed with hot penne . We are both excited for our tomatoes to start bursting out of the garden to come back here...often.

    Really great using ripe, in-season tomatoes, even when marinated for less time. For less sweet tomatoes, add a pinch of sugar.
