    Very tasty recipe. Nice and light, while very flavorful. Lovely contrast between the sweetness of the grapes, the spice of the curry, with a nice crunch from the broccoli and cashews.

    This was delicious and super-easy. It will definitely be making it into our standard weeknight rotation. If you cut the broccoli and grapes ahead of time, you just have to throw the chicken + broccoli + grapes on some sheet pans and roast 20 minutes while you get the lettuce + extras ready. All of the flavors go together really well, and the chicken and crunchy cashews make it feel satisfying. Highly recommended.
