    This was pleasant, but not exactly mind-blowing. Didn't come out with exactly the creamy texture I was expecting, but that was probably my fault for using a light coconut milk instead of a full fat one (the liquid reduced down a lot more than I expected). That said the eggplant added a nice texture and the meat stayed very tender. I went fairly easy on the curry paste for my husband's sake, but if I were to make it again just for myself I would definitely add more.
