    I just made the lemon curd for the lemon and blueberry tart. Easy method, with the ingredients mixed together initially rather than adding the butter a piece at a time. My 5 egg yolks weighed 5 grams too little; I decided just to go with that and it turned out fine. Lovely balance of sweet and tart.
