    Can substitute vanilla bean paste or vanilla extract for vanilla beans, and milk for half and half cream.

    The quantity was exactly right to fill 8 eclairs. In the pastry cream, I used whole milk and vanilla extract. I had to use a fair amount of force to whisk the cream into the cold pastry cream, but it turned out fine. Great flavor and texture.
