    I've made the simple tomato sauce recipe in this book (pg. 264)and was underwhelmed. This recipe, however, with the bacon and onion is outstanding! I had a bunch of heirloom tomatoes from the farmers market and a surplus of cherry tomatoes from the garden so I used those. Changed the procedure a bit. Cooked Pancetta until crisp and set aside. Sautéed the onions until slightly caramelized; added white wine and reduced it and set aside. Put all the tomatoes ,chunked but not peeled or seeded, in the pot and simmered with some salt until quite liquefied. Pureed in the pot with an immersion blender. Strained the tomatoes to separate out the seeds and bits of skin.Put tomatoes, Pancetta and onions back in the pot and reheated with a chiffonade of fresh basil. Absolutely delicious!

    A variation of tomato sauce for pasta. Delicious and simple. Time to make: ~30 minutes. Leftovers keep well or can be frozen. Some minor variations are given. P265.
