Can substitute Puy lentils, cannellini beans, farro, or buckwheat for green lentils; oranges or ruby grapefruits for blood oranges; and Parmesan cheese, pecorino cheese, or salted ricotta cheese for Manchego cheese.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This isn't winning any salad awards for me, but I say that as someone who finds most leafy salad pretty mirthless (there's just something about the texture that makes them an unpleasant eating experience for me). However, any excuse to eat blood oranges is great and I did enjoy Waitrose manchego for the first time, but overall this isn't super exciting.
