Prawns on pumpernickel toast (Pumpernickel toast skagen) from The Little Swedish Kitchen: Over 100 Recipes to Celebrate Every Season (page 226) by Rachel Khoo

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made the toast with sourdough instead of pumpernickel because my kids prefer it and because that is how I ate it in Sweden. I also omitted the caviar because I didn't have any but will try it with caviar next time, as I understand that is the defining ingredient of toast skagen. Next time I will top it with sliced hard boiled eggs because they are delicious on toast skagen!

Had this for a light Sunday lunch and very good it was to. Unsurprisingly didn’t have any Kalix caviar to hand so left that off and used homemade mayonnaise. Eaten with a side salad. Goes without saying.... make sure it’s at room temp when eating.
