    The potatoes turned out soft, crackly, and very savory. I had to use different sizes, but it did not seem to matter. Did not have salt flakes which would improve the presentation, but tasted fine with Hawaiian pink salt. Also used easy to find yukon gold in two different sizes. I loved everything about these potatoes. Photo added.

    The best way to cook potatoes. My boys just love them and there are never any left over. I followed the recipe exactly despite my overwhelming urge to halve the oil content. Very easy and straightforward. It doesn’t seem to matter not being able to use kestrel potatoes.
