    Unless a vegan is actually coming to dinner, vegan ceases to be vegan when I cook it. My flour tortillas have lard. My mayonnaise has eggs. But the filling (this recipe) remained vegan in this case. The use of coconut butter in this case serves the flavor of the filling rather than being solely a nutritional choice. I've used similar seasonings for roasted cauliflower so I trusted that portion of the recipe. Do be careful to not overcook the cauliflower. What was new to me was turning the mixture into a taco - avocado, cabbage, chilli pepper, lime ... do turn the cauliflower into a very satisfying taco. This taco stands on its own or would make a very pleasant surprise on a plate of tacos with more traditional fillings.
