Freekeh vegetable soup from Sababa: Fresh, Sunny Flavors from My Israeli Kitchen (page 164) by Adeena Sussman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Phenomenal!!!!!!! So delicious and easy to prepare. Different flavor composition that is incredibly satisfying.

12/16/20: Sub broccoli for kohlrabi if unavailable. 1/28/25: made again and this time I used kohlrabi as called for. It is a soup that you could sub different vegetables if you want. Try parsnips, turnip, broccoli, etc. I halved the recipe as I was only feeding two people, but my picky son loved it. The cayenne adds quite a kick so if you’re sensitive, either add a dash or omit. I found Freekeh in an Armenian market. I have never seen it in a major grocery store here in the US.

Amy made this for our supper club meet up - delicious and could easily be a main course meal.
