    Can substitute trout fillets or scallops for salmon fillets.

    Wild salmon and fresh herbs are key. Don't use parsley alone, needs another herb (chervil/thyme). Salt and pepper fish non-skin side before adding to hot pan. Cook times after flipping depend on temperature (refrig or room) and thickness of salmon/trout/scallops. Serving size cuts of salmon filets take 3 minutes after flipping.
