    Addictive and easy. Good to make when you want a cucumber salad that isn’t heavy handed with the vinegar.

    I grew up with the more authentic Chinese version of this but found this to be an absolutely delicious spin on a classic. I accidentally used double the salt and vinegar but ended up loving it this way!

    I did not taste the garlic oil and felt the turmeric added a bitter note. I prefer Fuchsia Dunlop’s recipe from Every Grain of Rice.
