Steamed pork and pumpkin dumplings (Nangua zhengjiao) from The Food of Sichuan: A New and Updated Edition of the Classic Land of Plenty (page 385) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I tried making the dumpling dough gluten free, it only sort of worked. I ended up pan frying these, which worked well. The filling was delicious. I'll definitely make these again with a wheat dough and see if I get my folding under control. A definite winner.

I made the filling using the pot sticker dough recipe and method. These were very good. Great way to use up extra pumpkin puree as well.
