    There are actually more ways to make melted chocolate for dipping than this guide suggests (evidenced by other recipes in my EYB library) but Food 52 lists different methods and explains what happens to the chocolate with and without cream. I tweaked the guideline for adding heavy cream and used an old fondue method- added 1 tablespoon butter and 1/5 cup whole milk to my chocolate: 4 ounces 60% chocolate with caramel sea salt (bar) and 5 ounces semi-sweet chocolate chips. The first 7 strawberries dipped easily but I had to add milk to keep the remainder of the melted chocolate still melted because it started hardening up. All my chocolate dipped strawberries hardened up well even though I added quite a bit of liquid dairy. Very tasty and made for a special New Year’s Eve dessert. Served with vanilla ice cream.
