    Outstanding, I make this regularly for potlucks and dinner guests because people love it. The chili raisin and onion dressing is fantastic. I usually just add vinegar to fully coat then discard if needed once ready to mix. Roasting the cauliflower in seasoned yogurt is such a versatile, delicious trick and it's become one of my go-to preparations, playing around with the spices and seasoning depending on what else I'm making. Thank you Sami Tamimi and other Palestinian cooks for the inspiration!

    Roasted the cauliflower in the marinade but added a can of chickpeas and some previously cooked ground lamb. Quite good hot out of the pan. Will attempt the saladization of these components when everything comes to room temp.

    My supermarket cauliflower did not have leaves to speak of, but this was still delicious without them. I used a green jalapeno instead of red chile, and 1/4 red onion, which was enough for my taste. I stupidly forgot the salt in the yogurt and had to add it to the dressing - not quite as effective, but worked.

    I may be the outlier here, because I thought this was good but not great. The predominant flavours were lemon and salt, so if I made it again I’d dial both of those down. I agree there wasn’t really enough vinegar to pickle the quantity of onion and sultana mix, I’d maybe use extra vinegar and then discard some before adding the other ingredients.

    Delicious! Perfectly balanced (as long as you like tart), bright flavors, and so colorful in the bowl. Strong recommendation.

    Loved this! My pickled chili/onion/sultana mixture needed a bit more vinegar, but otherwise perfect as written. Fantastic way to do cauliflower.

    This is FABULOUS. I tossed in some freshly cooked chickpeas for a bit of substance and ate this as a vegetarian meal (1 batch for 2 people). I would make this again and double it, the leftovers would be a good lunch.

    Delicious! I loved the way the yogurt marinade caramelised and charred. The best part is the pickled onion, chilli and sultana dressing, next time I’d happily double it.
