    Delicious! Butter amount can be reduced.

    With canned chicken broth (not low-sodium), no additional salt was needed. The rice turned out perfectly using exactly 1 14.5-oz can broth. I used lemon and parsley instead of lime and cilantro, a delicious variation. Just 1 Tbsp butter at the end made it buttery enough for us. In our house this just served 3.

    We both liked this rice as an accompaniment to this book's Chicken street tacos. The rice was nicely buttery and limey. Yum!
