    We grilled the chicken and lightly fried the tortillas. Overall a good recipe. Although the corn salsa was a bit too salty/sour (and I love salty/sour).

    Tasty weeknight taco recipe. I used chicken thighs in place of the chicken breasts. I lightly cooked (a little char) the corn tortillas over the stove's gas flame and liked the resulting flavor/texture. The corn, cheese, and onion mix is pretty tangy from the pickling liquid and the lime juice, but we both liked it. I would make this again.
